Meanwhile, combine the remaining sauce ingredients in a mixing bowl and stir well to dissolve the cornstarch. Add the ginger and garlic and fry gently until fragrant, about 2 to 3 minutes. To make the sauce: In a saucepan, add the sesame oil and set over low heat. Set aside to marinate while you prepare the sauce. Add the marinade ingredients to the bowl and stir to combine. Cut the chicken into 1-inch cubes and put into a large mixing bowl. Stir the chicken over the heat until it has warmed through, then transfer the chicken to a serving dish, sprinkle with sesame seeds and serve while it is still hot.Wash the chicken under cold running water, pat dry and trim off any excess fat.Add the fried chicken pieces to the sauce and stir to coat (image 2 above).A spoon will leave a trail in the sauce when it is thick enough (image1 above). Pour the chicken sauce mixture into the same pan that you used for the chicken, and bring it to the boil, stirring occasionally, until the sauce thickens.Once brown, drain on kitchen paper and set aside while you prepare the sauce.Stir to keep separate and allow the chicken to fry until it turns golden brown and is no longer pink on the inside. You will probably have to do this in batches to get a nice golden coating on the chicken.Try to keep each piece of chicken separate from the other pieces.When adding the chicken to the pan, take individual pieces of chicken, and hold each piece above the bowl for a few seconds to allow any excess batter to drain off.Heat a small amount of oil in a frying pan and add the chicken, a few pieces at a time (image 4 above).Mix the cornflour/cornstarch to a smooth paste with a little cold water and stir into the chicken stock.
